Sap's Running (Random Pointless Photo)

Sap buckets on maple trees in Deep River County Park, filling up for the maple syrup festival next weekend.
Later a pickup truck with a giant plastic tank in its bed drove up. The guys got out, took down the buckets and the poured the sap from the buckets into the tank. It would take many, many buckets to fill up that tank. And it probably takes that whole tank to make one gallon of syrup.
I want to know who first got the bright idea to try boiling down sap. Or rather, how they got that idea. Of all the crazy things to do.
